Well, it is organic matter, so it will rot. I don't know how to stop that, but I imagine sealing the whole work afterwards might make the smell or decomposition tolerable...
Usually pigments would be really, really fine powders that you grind evenly into a binder, such as acrylic medium. So, I suppose if you can find a way to completely dry out your brain, you can grind it into really, really fine powder, then bind it.
I'm not sure how it'd work with a mushy brain, but maybe it can be liquified and mixed into the binder... Don't take my word on that, though.
Yeah. I think i'll try it. I know it get's pasty when cooked. So. Just slightly overcooked should get it nice and dry. If it doesn't work i can just consume it and take pictures. mmm mmm.... tasty.
